Quail Rolled in Bacon
Ingredients:
6 quail breasts
1 red bell pepper, cut into long strips
6 fresh basil leaves
6 bacon strips, uncooked
Salt and pepper
Vegetable oil
Toothpicks
Directions:
Place the quail breast on a chopping board and sprinkle with salt and pepper. Place a basil leaf and a strip of red bell pepper on top of each quail breast.
Roll up and wrap each breast with a bacon strip. Secure with toothpicks.
Heat one tablespoon of vegetable oil in a skillet over medium-high heat. Cook the quail rolls on all sides until the bacon is browned. Be cautious with the toothpicks and remove them when the quail rolls are cooked.
Serve as an appetizer with ranch sauce dip and boiled quail eggs, if desired.
