Lemon Pepper Quail Sandwich
- 12 quail breast
- 1 red onion, thinly sliced
- 2 fresh tomatoes, cut in thin slices
- 2 tablespoons lemon pepper seasoning
- Radish sprouts or other.
- Artisan bread, sliced and toasted
- Mustard, to taste
- Vegetable oil
- Salt and pepper
In a pan add 1 tablespoon of vegetable oil. Sprinkle quail breast with lemon pepper seasoning and salt. Cook on medium-high heat until lightly brown.
Toast bread slices, spread mustard on each slice. On one of the bread slices, place the sprouts, then the sliced tomatoes, and finishing with the quail breast and red onion. Close sandwich with remaining bread slice.
