Quail Stuffed Potato
Ingredients:
6 quail breasts, diced into small pieces
1 medium onion, chopped
1 clove garlic, minced
5 medium potatoes
4 quail eggs, cooked
¼ teaspoon ground cumin
2 black olives cut in half
Vegetable oil
All-purpose flour
Salt and pepper
Directions:
Boil the potatoes in a saucepan with water. Once cooked and still warm, peel the skin off and mash the potatoes using a potato ricer. Add salt to taste and set aside.
In a skillet over medium heat, sauté the diced onion in one tablespoon of vegetable oil until softened. Then add the garlic, diced quail breast, cumin, salt, and pepper, and cook until browned.
Divide the mashed potatoes into four portions. Take one portion and shape it into a ball with a hollow center. Fill the hollow with a spoonful of the quail breast mixture, along with a cooked quail egg and half of a black olive. Carefully seal the filling inside the potato. Lightly coat each stuffed potato with flour and fry in hot oil.
