Lettuce Wraps with Quail Breasts
- 6 quail breasts, diced to taste
- 1 teaspoon freshly grated ginger
- Spearmint leaves. 1 tablespoon, chopped
- ½ red bell pepper, sliced
- Green onions, chopped
- ½ teaspoon Curry powder
- Coconut oil, 1 teaspoon
- Salt and pepper
- ¼ cup of water
- Iceberg lettuce
Heat a teaspoon of coconut oil in a skillet over medium heat. Add the diced quail breast, the curry powder, fresh ginger, salt, pepper, and cook until browned.
Add the slices of red bell pepper, and if necessary add little water, so it does not stick.
Finally, add the chopped spearmint leaves and green onions, and stir in for an additional minute.
Break off all the lettuce leaves and pile them on a plate, place a generous spoonful of the quail breast mixture in the middle of a lettuce leaf, taco-style
